Biggest...Made it tonight and the kids DEVOURED it! Biggest purposeful change for kid friendliness was to saute the shallots with the pork. Two biggest whoopses were 1) forgot to add the rice powder, and 2) forgot how to use palm sugar. I circled 3 aisles at Lion's looking for rice powder until I found it, too. I had the palm sugar since before you guys left, so I decided to use it up. I tossed 3 palm blobs into the fish sauce and lemon... and there it floated without dissolving... I ended up nuking it.
