My all-time favorite Malaysian entree!<br /><br />Lilian and I visited Kota Bharu on our honeymoon in 1990, and I went ga-ga over the ayam percik that we ate at the pasar malam there. After being simmered in a lemon grass/coconut milk/curry sauce, it was finished over grated hot coals ... with three chicken leg+thigh quarters held in each pincer-like bamboo shaft. There must have been several dozen shafts being tended by the vendor. Alas, we never found it anywhere near KL .. although we've not visited during Ramadhan.<br /><br />After we returned, I went looking for a recipe. After posting a request on a message forum of the then-new Prodigy service, I got a reply from a retired IBMer back East who found the recipe in a MAS (airline) cookbook. We've made that recipe several times with spectacular results (as long as we didn't simmer it so long that it falls off the bone by grilling).<br /><br />Our recipes (and photos of that pasar malam) are packed away during our remodel, but I'll be happy to post it or send to you after we move back in. There is a large Malay community in Satok, so the Ramadhan market is huge. You will find the kuehs you were looking for and more.
