Baked Egg Omelette

Italian Sausage, poached and then braised in red wine and garlic.

Sauteed bell peppers and leeks.

Egg yolks separated from whites and mixed with flour. Egg whites whipped to stiff peaks and folded back into the egg yolk mixture. Pour some into a buttered casserole dish, then add the fillings, then top with the rest of the egg mixture. Sprinkle with grated Parmesan cheese.

Baked at 400*F for 10 minutes then lowered heat to 350* for 17 minutes.
